Анотація: Fungal nanotechnology has great prospects for developing new products with industrial, agricultural, medicinal, and consumer applications in a wide range of sectors. The fields of chemical engineering, agri-food, biochemistry, pharmaceuticals, diagnostics, and medical device development all employ fungal products, with fungal nanomaterials currently used in applications ranging from drug development to the food industry and agricultural biotechnology. Fungal agents are an environmentally friendly, clean, non‐toxic agent for the synthesis of metal nanoparticles and employ both intracellular and extracellular methods. The simplicity of scaling up and downstream processing and the presence of fungal mycelia which afford an increased surface area provide key advantages. In addition, the large spectrum of synthesized nanoparticle morphologies and the substantially faster biosynthesis rate in cell-free filtrate (due to the higher amount of proteins secreted in fungi) make this a particularly enticing route. Understanding the diversity of fungi in assorted ecosystems, as well as their interactions with other microorganisms, animals, and plants, underpins real and innovative technological developments and the applications of metal nanoparticles in many disciplines including agriculture, catalysis, and biomedical biosensors. Importantly, biogenic fungal nanoparticles show significant synergistic characteristics when combined with antibiotics and fungicides to offer substantially greater resistance to microbial growth and applications in nanomedicine ranging from topical ointments and bandages for wound healing to coated stents.

Анотація: This book addresses issues arising from discharge of effluents from sugar industry on to surrounding land or into a water body such as physicochemical properties of soil, changes in the micro flora, quantification of soil enzyme activities as influenced by effluents. Disposal of effluents without neutralization has become general practice. These effluents are chemically heterogeneous, contain organic and inorganic pollutants including, sugar baggage, molasses, carbonates, bicarbonates. The impact of sugar industry effluents on microbial activities in terrestrial ecosystem is scanty. There is also significant interest in the study of soil enzymes because such effect reflects the potential capacity of a soil to perform certain biological transformation of soil fertility.

Анотація: The domestication of grapes dates back five thousand years ago and has spread to nearly all continents. In recent years, grape acreage has increased dramatically in new regions, including the United States of America, Chile, Asia (China and India), and Turkey. A major limiting factor to the sustained production of premium grapes and wines is infections by viruses. The advent of powerful molecular and metagenomics technologies, such as molecular cloning and next generation sequencing, allowed the discovery of new viruses from grapes. To date, grapevine is susceptible to 64 viruses that belong to highly diverse taxonomic groups. The most damaging diseases include: (1) infectious degeneration; (2) leafroll disease complex; and (3) rugose wood complex. Recently, two new disease syndromes have been recognized: Syrah decline and red blotch. Losses due to fanleaf degeneration are estimated at $1 billion annually in France alone. Other diseases including leafroll, rugose wood, Syrah de cline and red blotch can result in total crop loss several years post-infection. This situation is further exacerbated by mixed infections with multiple viruses and other biotic as well as adverse abiotic environmental conditions, such as drought and winter damage, causing even greater destruction. The book builds upon the last handbook (written over twenty years ago) on the part of diagnostics and extensively expands its scope by inclusion of molecular biology aspects of select viruses that are widespread and economically most important.  This includes most current information on the biology, transmission, genome replication, transcription, subcellular localization, as well as virus-host interactions.  It also touches on several novel areas of scientific inquiry.    Food Microbiology.

Анотація: This book presents comprehensive reviews on the principles, design and applications of nanomaterials in the food, water and pharmaceutical sectors. It is the fourth volume on Nanoscience in Food and Agriculture published in the series Sustainable Agriculture Reviews. It focuses on different aspects of the rapidly emerging area of nanotechnology. Nanomaterials are not new – they have always occurred in nature, but what is new is the methods that allow the synthesis of unprecedented nanomaterials with tailored, finely tuned properties, which open the way for numerous applications in diverse fields. In particular, the high-surface-to-volume ratio of engineered nanomaterials makes them often more efficient than those found in nature. While nanomaterials are being commercialized in various sectors, they are only slowly being used in the food industry and their use is still a topic of debate. Research shows that nanomaterials improve bioavailability, shelf life and nutritional value by reducing nutrient loss and they are essential in active packaging, also known as intelligent or smart packaging, which helps extend shelf life, monitor freshness, display information on quality, and improve safety and convenience. Nevertheless, the potential toxicity of new nanomaterials should be studied before they are used in consumer products.

Анотація: This book introduces readers to food safety assessment research on Genetically Modified Organisms (GMOs). As is broadly known, the main concerns about GM foods’ adverse effects on health are the nutrients, toxicity, allergenicity and unexpected effects. Before GMOs can be made commercially available, a comprehensive food safety assessment – taking these concerns into account – must first be performed. Exploring these aspects, the book is divided into two parts: the first part focuses on the safety assessment guidelines of the CAC, while the second highlights new methods used for the evaluation of GMOs’ safety. Offering an essential, practical guide, it will be of interest to researchers and graduate students in the fields of food science and public health.

Анотація: This book is an overview considering yeast and fermentation.  The similarities and differences between yeasts employed in brewing and distilling are reviewed.  The implications of the differences during the production of beer and distilled products (potable and industrial) are discussed.  This Handbook includes a review of relevant historical developments and achievements in this field, the basic yeast taxonomy and biology, as well as fundamental and practical aspects of yeast cropping (flocculation), handling, storage and propagation.  Yeast stress, vitality and viability are also addressed together with flavor production, genetic manipulation, bioethanol formation and ethanol production by non-Saccharomyces yeasts and a Gram-negative bacterium.  This information, and a detailed account of yeast research and its implications to both the brewing and distilling processes, is a useful resource to those engaged in fermentation, yeast and their many products and processes.

Анотація: Iodine is an essential micronutrient and an integral component of the thyroid hormones, which are required for normal growth and development. The iodine deficiency disorders (IDD) encompass a spectrum of adverse health effects including goiter, cretinism, hypothyroidism, growth retardation, and increased pregnancy loss and infant mortality. This volume summarizes the current understanding of the effects of iodine deficiency as well as iodine excess. It also discusses best practices for salt iodization, the mainstay of global IDD prevention efforts, and other forms of food fortification. The effectiveness of iodine supplementation for vulnerable populations, an evolving strategy in many regions, is also described. Low level environmental exposure to chemicals such as perchlorate and thiocyanate, which competitively block thyroidal iodine uptake, appears to be ubiquitous worldwide. There has been recent concern that such environmental exposures might pose a health hazard by inducing or aggravating underlying thyroid dysfunction. This up-to-date volume explores both the effects of iodine deficiency as well as the best strategies for IDD prevention.
